Potato Pancakes and Raspberry Apple Sauce

My grandmother made potato pancakes all the time - year round. This is her recipe and my apple sauce recipe. Recipes to follow.
1 large baked potato, no skins
1cup cold water
1/4 minced onion (very tiny)
1 tsp sea salt
Pinch of dill (if savory) or a pinch of caraway (if sweet)
Egg replacer for one egg
Beat the replacer with the seasoning. Puree the onion and potato and mix with a little water at a time until it is a gruel-like consistancy. Add the replacer and season with salt.
Fry in olive oil. Makes 7-10 pancakes.
Peel and cut up 6 apples- I used Gala. Transfer to sauce pan and add 1/4 cup agave. Simmer until the apples begin to break down. Add 1 cup raspberries and a pinch of nutmeg. Continue to cook about 45 minutes. Cool. Puree. Serve with pancakes.
