Savory French Toast Toward 2010

Recipe to follow.
I dredged two slices of beer bread in some Mimic Cream with salt and pepper to taste. Fry in EVOO over medium flame about 6 minutes per side and then stuff:
1/2 cup Tofutti Cream Cheeze
2 scallions, sliced
1/4 cup sliced mushrooms
1 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Assemble and broil until gooey and delish. Top with sliced tomatoes and chipotle sauce (previous recipe post)
Feeds 2 generously.
