Red Curry Coconut Soup with Tofu

Spicy and warm
Chop up:
1 cup carrots
1 white onion
1 bunch green onions
2 tomatoes
3 cloves garlic
1/2 bunch cilantro
1 bunch basil
Add the veges to a little chili oil and quickly saute then add to 2 cups vegetable broth and season with juice from 3 limes, 3 tbsp sea salt, pepper to taste, 3 tsp ginger. Add 1 cup rice, 2 cups coconut milk,1 stalk lemon grass and 1/4 cup red curry paste. Simmer 30 minutes or so. Add diced tofu (1 cup). Remember to remove the lemongrass.
