Pecans au Poivre

For the less pompous: Black Pepper Pecans. WARNING: You will hack and heave like your throat is being assaulting by a gnome wrecking crew while making this. But, oh, is it worth it.
Ingredients:
2c pecans
2T kosher salt
1/4c coarse-ground pepper
1/2c sugar
Directions:
Combine all but nuts in bowl.
Heat up saucepan on med-low, add pecans and toast for a 2 minutes.
Add 2/3 of the sugar-pepper mixture, and cook until sugar melts and begins to coat nuts. NOTE: The mixture WILL burn if you aren't careful.
Remove from heat and stir in rest of mixture. Move to baking sheet to cool.
