Ingredients: 2 carrots, 1/2 large parsnip, 3 stalks celery, 1 turnip, 1 onion, 1 red potato, parsley and such type herbs, 1/2 small leek, 8 chicken bouillon cubes, 1 lb diced plum tomatoes, 1 can kidney beans, 1/2 box fancy elbow noodles, 10 large chicken legs.
Directions: Cut up & skin the veggies. Not too small or will dissolve (melt) while cooking. Combine all ingredients, except pasta, in large pot. Fill with water 3/4 of the way. Cover pot leaving slightly ajar so does not boil over during cooking. Cook in high flame until boiling, about 10 minutes. Lower flame to medium. Stir occasionally. In separate pot boil fancy elbows 7 minutes or until tender. Drain, run under cold water and put into ziploc bag. After 1 hour lower flame under soup pot to low. Let simmer 2-3 hours, stirring once per hour. Soup will be ready after 2 hours. Let it sit longer, the longer the better the flavor will soak in. Once you are ready to stop cooking, remove from stove, add fancy elbow noodles and mix Yummy soup - now ready. ENJOY!
