Retire the cover, retire the rosemary stems, put the paella it in the middle of the table and... enjoy it!!! Traditionally paella is eaten directly from the pan (=paella) in the center of the table, often with a spoon, ideally with a wood spoon. All the friends and familly surrounding the paella and sharing the same pan is a lovely typical image of Valencia. Valencians love "socarrat": the ligtly burnt rice on the bottom of the paella, and is sometimes cause of funny fights to get it. Actually a paella without this "socarrat" is considered as of lower quality.
