Lemon Cheesecake
2 cups ground graham cracker crumbs
1/4 cup plus 2 tbsp melted butter
2 tbsp sugar
bake 350 degrees for 5 minutes. Cool.
3 8-ounce pkgs softened cream cheese
3/4 cup sugar
3 eggs
grated lemon peel
1/4 cup lemon juice
2 tsp vanilla
2 cups sour cream
3 tbsp sugar
1 tsp vanilla
Combine graham cracker crumbs, melted butter and sugar. Press into 9 inch springform pan. Bake 350 for 5 minutes & cool
Beat cream cheese till smooth, add sugar, add 3 eggs (one at a time). stir in lemon rind, lemon juice and vanilla. Pour into pan. Bake 350 for 35 minutes
Combine sour cream, 3 tbsp sugar and vanilla and mix well. Spread over cheesecake and bake an additional 10 minutes at 350 degrees. Cool 1/2 hour on wire rack. Cover and refrigerate 8 hours. Remove springform pan.
Serve with lemon glaze.
