Pralines

1 cup white sugar
1 cup brown sugar
1/2 cup evaporated milk

1 tsp vanilla
2 Tbsp butter

1 1/2 cups pecan halves

Combine the sugars and milk in heavy suacepan over medium heat. Bring the mixture to a boil and let it boil for 5 minutes, stirring occasionally. Remove the pan from heat and add the butter and vanilla. Stir-stir-stir for at least a minute, then add the nuts and mix just until they're all coated.

Working at great speed drop large-ish spoonfulls onto waxed paper or foil. The mixture hardens fast, so hurry hurry.

Once they harden, peel them off the waxed paper, eat one. When you come out of your sugar coma, put the rest of them into ziplocks and give them away to your friends.
