thai chicken curry

serves 3-4
chicken (about 400g) sliced
1 leek
100g of green beans
1 capsicum (yello, red or green) roughly chopped
1 stalk celery diced
2 red chillis - seeds removed and finely sliced
1 400g can of coconut milk
1-4 tsp green curry paste
1) fry the chicken untill it starts turning brown
2) add curry paste, chilli and celery and cook for a minute or two
3) add coconut milk. bring to the boil.
4) bring down to a simmer and cook for about 10 mins
5) add beans, capsicum and leek. Cook until veges are just done.
serve with rice. YUM!
