It's ANZAC Day today - what better time to be baking these bikkies?!

Originally "Soldiers' Biscuits", the wives, mothers and girlfriends of Australian and NZ soldiers sent these in care packages to the troops during the first World War.

Based on the CWA recipe...

1/2 cup sugar
1 cup rolled oats
1/2 cup dessicated coconut
1/2 cup shredded coconut
1 cup plain flour
1 tsp bicarb soda
125g butter (melted)
1 tbl golden syrup
2 tbl boiling water

Mix all dry ingredients (except the bicarb).
Add the bicarb to the boiling water.
Add golden syrup and boiling water mix to the melted butter.
Mix all together.
Roll mixture into walnut-sized balls, and press flat-ish onto a greased/lined baking tray.
Bake @ 180ÂșC for 12 minutes.
