Spinach, carrot, mushroom, and tofu with oyster sauce.

Sixth and pan-fry tofu brick in cast iron skillet to a nice brown. Slice into strips. Stir-fry garlic and carrot in oil. Add quartered cremini mushrooms, a little salt, stir fry. Add mixture of soy sauce and oyster sauce. Crank heat to reduce sauce as mushrooms release liquid. During last 30 seconds, add spinach (ours from CSA delivery). Add corn starch-water slurry and thicken. Toss in sliced green onions (again, CSA) and tofu strips. Over rice of choice.

Note: I'm sure you'll make sure your oyster sauce is of the vegan mushroom variety if that's the way you roll.
