I like to make extra rice so I can cook a quick fried rice for lunch with a few vegetables.
This one is with leftover brown rice. I chop some garlic (2 cloves) fry in a canola or peanut oil (about 2 tablespoons), add veg and rice fry and a dash or two of fish sauce. Sometimes I add soy sauce but not usually An egg or silken tofu at the end gived it a nice texture. Here I've used chopped choy sum, some enoki mushroom and garnished with chopped spring onions (scallions) and some sesame seeds. Chili paste with black bean is a nice condiment or a chili oil.
All ready in less than 10 minutes
