Sunday morning culinary exploits - butterfly cakes with vanilla buttercream. Served with some loose leaf tea.

Recipe as asked for! :

5 oz self raising flour (or 4-6 oz, depends how "cakey" you want)
4 oz butter
4 oz caster sugar
2 large eggs

Buttercream:
3 oz icing sugar
2 oz butter
Few drops of vanilla extract (orange oil nice too)

Cream butter & sugar, then add eggs & flour. Bake for 15 ish mins at 190C. Until they stop "singing". Beat buttercream stuff until shiny. Cut a chunk out of top of each cake and dollop cream in. Photograph all arty-like. Then eat.

Makes about 6 muffin-sized plus 8 smaller cakes...
