Tanya's Lamb and Eggplant "Stuff" Recipe
500 g (approx 1 lb) Lamb fillets or lamb backstraps
2 big or 3 small Eggplants (aka aubergines)
4 Tomatoes
1/2 bunch Flat leaf (continental) parsley
1/2 bunch Coriander (aka cilantro)
3 cloves Garlic
Quite a lot of Paprika
A fair bit of Cumin
Dried chilli flakes
Brown sugar
Salt
Olive oil
1. Marinate the lamb with 2 tbs olive oil, 2 cloves of garlic, 1 tbs paprika and 1 tsp cumin for at least 30 minutes.
2. Slice the eggplant into 1 cm (1/2") thick discs and bake them in the oven at 180 Celcius for 20-30 minutes until they look cooked. Brush with oil before baking if that's your thing.
3. Cook lamb fillets whole on a BBQ or grill. Time will vary depending on size of fillets and how well cooked you like it (I recommend medium) but 5 minutes on each side will be more than enough. Leave the fillets to stand on a plate for at least ten minutes (you can do the next steps while waiting).
4. Dice tomatoes and toss into a frying pan with 1 tbs brown sugar, 1 tsp chilli flakes, 1 tsp salt and some olive oil for three minutes on high heat. Add the baked eggplant and cook for a further three minutes, stirring the mixture up.
5. Add 1 tbs of paprika and 1 tsp of cumin to the eggplant and tomato "stuff" and stir like crazy. It doesn't matter if the eggplant slices get broken up - that's the point!
6. Chop the coriander and parsley and add to the "stuff", turning off the heat when you do so. Leave the "stuff" for 2-3 minutes to wilt the herbs.
7. Diagonally slice the well-rested lamb into 1 1/2 cm (3/4") thick slices.
8. Plate up, with "stuff on the bottom and lamb pieces arranged on top in a quasi-fancypants fashion.
9. Welcome to flavour country.
NB. For the über-foodie - try adding 1 tbs of sumac to the "stuff" to kick it to the next level.
