Chopped almonds, 70% Noir Chocolate chunks, cocoa powder and a handful of white chocolate buttons thrown in as well.


2+1/2 cups/ 375g/ 13 oz all purpose plain flour
3/4 cup/ 125g/ 4+1/2 oz unsweetened cocoa powder
2 tsp baking powder
1/4 tsp salt
1/2 cup/ 125g/ 4+1/2oz butter, softened
1+1/3 cups/ 240g/ 8+1/2oz granulated sugar
1/2 tsp vanilla extract
1/2 tsp almond extract
3 large eggs
1 cup/ 100g/ 3+1/2oz coarsely chopped walnuts
4oz/ 125g dark chocolate, coarsely chopped

-Preheat oven 325F/ 170C/ Gas 3
-Line cookie sheet with parchment paper
-Sift flour, cocoa, baking powder and salt into medium bowl
-Beat butter and sugar in large bowl with electric mixer until creamy
-Add vanilla, almond and eggs, beating until just blended.
-Mix in dry ingredients, walnuts and chocolate to form a stiff dough.
-Divide dough in half and form two 12 inch logs, place 3 inches apart on cookie sheet and flatten the tops.
-Bake for 25-35 minutes until firm to touch
-Transfer to cutting board to cool for 15 mins.
-Cut on the diagonal into about 1 inch slices
-Put slices cut side up on cookie sheets and bake for another 10-15 mins more.
-Keep and eye on them as they can burn very easily.
