I was trying to get the steam here, but you can't see it at all. I modified a chai recipe from Epicurious.com:
Put 2 inches of thinly sliced fresh ginger, 2 cinnamon sticks, 6 cardamom pods, 8 whole cloves, 1 1/2 tsp whole black peppercorns, and 2 tsp orange peel (or 6 inches fresh orange peel) in a pot and gently mash or bruise the spices. Add 6 cups of water and bring to a boil over high heat. Reduce heat, partially cover and let simmer for 10 mins. Remove from heat and add 6 tsp of Darjeeling tea, or 6 black tea bags. Cover and steep for 5 mins. Whisk in 1/2 cup of light brown sugar and 2 cups of milk (or half and half, for richer chai). Return to high heat until just simmering. Strain mixture to remove spices and tea, and serve hot.
