Big Daddy's Leftover Pizza Frittata

Welcome once again to Cooking with Big Daddy. Today, we'll be taking that leftover pizza sitting in the fridge and turning it into something really exciting! When thinking about what to make for breakfast this morning, I had the idea of making a leftover pizza scramble. This is an old college trick - take whatever leftovers are in the fridge and scramble them with eggs for a tasty breakfast treat. However, I decided that pizza, due to the amount of bread involved, would be better suited to a frittata. It turned out great! Here's the recipe:
Two slices of leftover pizza, cubed
1/2 lb. grated sharp Cheddar cheese
Handful of finely chopped onion
5 eggs
Whip eggs until foamy. Add other ingredients, one at a time, whipping with a fork after each one. Pour into 8 x 8 inch Pyrex dish that has been sprayed with Pam and bake 45 minutes at 350 degrees. Let stand 10 minutes, serve with salt, pepper, ketchup, and/or Tapatio to taste.
