Apple Sauce for the Latkes

If interested, my Homemade All-Natural Apple Sauce, as pictured above:
3 lbs apples: 1lb MacIntosh, 1lb Pippin (or Newton), 1 lb Granny Smith, 1 giant or 2 small cinnamon sticks, lemon juice, nutmeg, honey
1 - Peel or don't peel apples (I don't). Core and cut into 1/2 in. thick slices.
2 - In a pot this size (see above), put 3/4 C. water. Add apples, cinnamon stick(s) and 1 tbsp lemon juice.
3 - Bring water to simmer over low heat. cover. Stir every few minutes (keeping covered when not), for 20-30 minutes or until broken down.
4 - Remove from heat. For smoother sauce, put through a food mill. For slightly chunkier, just break apart with spoon (as you see me doing).
5 - Stir in about 1 tsp. nutmeg and about 2 tsp. honey to taste (less or more depending on desired sweetness - usually the variety of apples recommended above stand out on their own, though, so not much sugar should be necessary).
