Breakfast Burrito
-2 eggs
-salsa
- 1 Flour Tortillas ( I used a 10" but you can buy the 5" and just add one egg instead of two.)
-cheddar cheese
-salt and pepper

The Steps
Scramble 2 eggs. Lightly coat the tortilla with water and microwave to steam for 10-15 seconds depending on microwave.
Add the eggs, a bit of salt/pepper , cheddar cheese and some salsa into the tortilla and fold ( see above).
Serve with grits or hashbrowns on the side or whatever you prefer.

Eat....
The burrito is best when the cheese and salsa are still cold. The contrast of the warm eggs and cool cheese and salsa will increase the enjoyment of this meal.

Simple, right?
A million variations to this recipe exist but this is one you can literally complete in under 5 minutes.

Grits
Needed items
- couple pinches of salt
- butter
-sauce pan
1 cup of water ( I always add a tiny bit of milk too )
1/4 cup of grits

Instructions
Bring water to a boil and add grits. Stir in the grits. Lower the burner temp to low and continue to cook for 5-6 minutes. Add a pinch of salt and a small amount of butter. When you serve the grits add another small pinch of salt and butter to taste.

If the grits look to thick add water. If too watery cook longer or add a dash more grits. Give the grits some time to cook ( 5-6 minutes ) before adding water or more grits since they will absorb a good amount of liquid.

Grits are very neutral tasting so salt and pepper are a must. Cheddar cheese or bacon bits on top or mixed in are nice as well.

Living in the south I forget that a good portion of the USA has never cooked or tasted grits.
