This omlette may not be to everyones taste but anyway here goes...
[p.s. I don't have my toaster on the wrong setting...I just like my toast a bit burnt with this omlette..seems to go well for me]

Ingredients
One egg
One slice of cheese (I don't normally use cheddar cheese for this - something milder is more suitable)
One hot green chillie chopped finely
A squirt of tomato ketchup
1 tbsp oil

Method
Slit the green chillie lengthwise and chop finely. Chop / grate the cheese.
Break the egg in a bowl and add salt to taste. Add the chopped green chillie Beat the egg till it's a bit frothy.
Heat oil in a non stick pan and add the egg mix. Lower the heat and allow the egg to cook a bit till its semi solid at the base. Shake the pan gently to help the cooking process. Once the egg is firm at the base and semi-solid on top, add the cheese along the diagonal of the omlette. Add a squirt of tomato sauce over the cheese and fold the omlette. Allow it to cook until the cheese melts and the sauce begins to leak out a bit.
Serve with cold burnt buttered toast :-)
