* If the feta is on the salty side, it makes wines with an impression of sweetness (like most California Chardonnays) taste a lot sweeter. Not good.
*If the feta is on the salty side, it makes hot wines (with high alcohol like 13% or above) taste hotter. Not good.
*If the feta has a drier texture (moving towards crumbly), it can make an off-dry wine taste more dry. Good.
*If the feta has a drier texture (moving towards crumbly), it can make a hot wine taste less hot. Good.
*If the feta has a creamy texture, it can make a hot wine taste hotter. Not good.
