Recipe:
Make syrup first by boiling 1/2 cup water with 4 tbsp honey and 1 1/3 cup sugar. Optionally, add 3 cardamom pods. Boil gently until coats back of spoon. Add 2 tbsp lemon juice, mix to incorporate. Leave aside to cool.
In food processor, pulse 300 g pistachios with 2 tbsp sugar.
Clarify 200 g butter (or just melt some ghee). Layer 12 sheets of phyllo in dish, brushing each one thoroughly with the melted clarified butter/ghee. Top with the ground up pistachios (reserve a couple of tablespoonsful for topping the finished product) and spread to even height. Layer another 12 sheets of phyllo, brushing each one as before. Slice with pointy knife into serving size pieces, making sure to slice all the way through the bottom.
Bake at 350 degrees F for 10 minutes. Pour over any remaining clarified butter/ghee. Return to oven and bake at 325 degrees F for 1 hour. Pour over the cool syrup and return to oven. Turn off oven heat, leave with door closed to absorb all syrup for at least 30 minutes. Top with reserved pistachios. Try to hold back from inhaling the whole pan in one sitting - it's even better the next day.
