another Dorie Greenspan concoction
Recipe:
1 3/4 cups ground walnuts
1 3/4 cups all-purpose flour
8 oz (2 sticks) butter
1/2 cup sugar
1 tsp vanilla extract
icing sugar
raspberry jam
Mix flour and nuts well.
In large bowl, beat butter + sugar until fluffy, then add vanilla extract and beat for another 30 seconds. Add nut/flour mixture and incorporate well. Form small balls and place on cookie sheet about 1" apart. Make dimple in the middle of the ball with finger. Bake at 350 degrees F for 15 minutes. Dust with icing sugar once cooled, and fill with jam (if your jam is not very runny, you may need to heat it up first).
