Ingredients (Original Recipe):
12 oz bonless skinless chicken breasts
2 tbs vegetable oil
1/2 cup chopped onion
14 oz green beans
14 oz can of diced tomatoes
14 oz can of sliced carrots
1 large potato cut into 3/4 inch cubes
1 cup uncooked rice
1/2 tsp salt
1/4 teaspoon pepper
1 cup water
1/2 cup shredded Cheddar cheese

Cut chicken into bite-size pieces. Heat oil in skillet over medium heat; add chicken and onion. Saute for about 3 minutes.

Add beans, carrots, potato, rice, salt and pepper to skillet and mix. Pour in the water. Cook covered over medium-low heat, stirring occasinally, for 20 minutes or until potatoes and rice are tender.

Take off the heat and sprinkle the cheese on top, let stand for 5 minutes.

Very versitle, I substitued black beans for the green. Can also use corn instead of the carrots. As is, this is a little bland, so add some green chilies or hot sauce during cooking or after serving. I also used chicken broth instead of water. I have also used white wine in the past. It also scales well up or down.

If you use fresh carrots, cook them about half way through before adding to the dish, otherwise they won't be done at the same time as everything else.
