Pretty simple recipe really.
-6-700 grams of boiled beetroots
-500gr yogurt
-100gr Walnuts
-2-3 cloves garlic (depending on your taste)
-100gr olive oil
-1 tbsp vinegar
-salt
-pepper

I diced the beetroots into fairly small "cubes". I then used a small kitchen mixer to make a paste out of the garlic, walnuts, salt, pepper, vinegar and oil. I added the beatroots, yogurt and "dressing" into a bowl and mixed well. Put into the fridge for a couple hours and it's ready to serve. I added a bit extra ground pepper to my serving. You could sprinkle some walnuts on top as well to give it some crunch and extra walnuty flavor.
