Ova jednostavna pasta ne zahteva previše vremena za pripremu: obarite (5-10 minuta)prethodno očisćenu šparglu (skinuti perca sa strane i deblje, tvrdo dno stabljikica), isečenu na štapice dužine oko 3cm. Obarite testeninu. U malo istopljenog putera dodajte par sitno seckanih čenjeva belog luka, obarenu šparglu i propržite par minuta na srednjoj vatri. Dodajte malo slatke pavlake i sok od pola limuna, još par minuta (do ključa) i gotovo. Tagliatelle prelijte sosom a preko možete narendati malo parmezana (ili kore od pomorandže umesto, ako ste u eksperimentalnom modu). Uz to čaša rashladjenog belog vina, za potpuni ugodjaj.
Easy to prepare, yet delicious, asparagus tagliatelle is definitely one of my favorite ways to treat asparagus. Few minutes of boiling, followed by few minutes of simmering in combination of melted butter, garlic, creme fraiche, and lemon juice and you have a magnificent topping for your al dente cooked tagliatelle. Grated parmesan cheese (or orange zest, for those of you who like to experiment) is optional. A glass of cooled white wine is mandatory.
