Peach-Marzipan-Stripes
You'll need
1 package of puff pastry (approx. 450 g), thawed
2 small cans peaches (each 415 g)
1 egg
100 g marzipan
100 and 50 g confectioners' sugar
10 - 15 g pistachio, shopped
Heat the oven to 200°C (92 °F). Drain the peaches and safe the juice. Cut 3/4 of the peaches and the marzipan into cubes, cut the rest of the peaches into slices.
Mix with the dough hook marzipan, egg white, peach cubes and 100g confectioners' sugar.
Put baking parchment on a baking tray. Lay the puff pastry sheets in a rectangle (approx. 10 x 15 inch) and press them together.
Fold the edges in by less than 1 inch. Pierce the pastry with a fork several times and put the marzipan mixture on it. Decorate with peach slices and pistachio. Whisk the egg yolk and coat the edges with it.
Bake it about 35 minutes.
Let it cool down after baking. Mix 50 g confectioners' sugar with a little bit of the peach juice and coat the edges with it.
