This is a great way to pretend to be barbecuing or grilling as autumn fades towards winter....

How many different ways can you fix a Cornish Game Hen? Luckily, this answer can only be approached with a lifetime of experimentation. And this is the kind of science that warms the heart! This is a bit on the sweet side…but then don’t we all need some comfort these days? And the left over Irish Whiskey can be use for Irish coffees. Let hens soak over night if possible in the marinade glaze.

INGREEDS:
3 Cornish game hens, thawed

1-1/2 cup of apricot preserves
1/2 cup orange juice
1 small lemon
2 Tbs. of your favorite chicken BBQ rub.
1 tsp. salt
1/4 cup butter
1/2 cup Irish whiskey

STEPS
Put all ingredients (except hens) in a large 2 quart glass bowl, microwave for 90 seconds. Then blend with a whisk. Repeat heating and blending until it is smooth. Pour off about half (2 cups) into a jar and put aside in the refrigerator.

Split them down the center of the breast bone then wash, rinse and pat dry.

Pour a little of the marinade or glass into the glass bowl. Coat each hen, then poke holes into it with a fork to enhance penetration. Place hens in a plastic bag and bath them in the remaining apricot-whiskey glaze.

Coat hens and place skin side down. Cook indirectly or place on a roasting pan at 350OF for 30 minutes. Then coat and turn them over, skin side up and coat skin side. For the next 40 to 50 minutes coat the hens every 10 minutes with the remaining sauce. During the final 2 minutes of basting, place the hens at least 6 inches away from the broiler and let it blacken the top slightly. Takes about 1+ hour to cook, remove when done.
