Udaipur Cauliflower

1 medium or large head cauliflower
2 small or medium tomatoes
2 Tbsp Cilantro
Some (1 or 2 Tbsp?) Cumin Seeds
Minced, fresh ginger (about 1 Tbsp)
2 Dry Red Chili Peppers
Some (1 Tbps or so?) White Vinegar
Vegetable Oil
Toast the seeds and peppers, with the ginger, in oil for 2 minutes over medium-high heat. Add cauliflower. Cook on medium heat for about 8-10 minutes, stirring regularly, until browned. Adjust heat so cauliflower browns but spices don't burn.
Add tomatoes and vinegar. Stir and cover, cooking on low heat for another 5 minutes until cauliflower is to the tenderness you like. When done stir in cilantro. Add salt to taste. :)
