Strawberry pie

We picked strawberries, and then I made strawberry pie.
I adapted basic Joy of Cooking recipes:
Basic Pie Dough:
Sift together 2 cups of flour and 1 tsp salt. Cut in 2/3 cup chilled shortening (I used butter-flavored Crisco) and 2 tbsp butter. Sprinkle mixture with 4 tbsp cold water. Mix together until the dough forms a ball and refrigerate until ready to use. Makes enough for a double-crust pie.
Berry Pie (can be made with any berry or combination of berries):
Mix 4 cups of whole, hulled, strawberries with 1 cup of sugar, 1/4 cup flour, 1 1/2 tbsp lemon juice, some lemon zest, and 2 tsp quick-cooking tapioca pearls. Let mixture stand for 15 minutes.
Dump berry mixture into a pie pan lined with the basic pie dough above. Dot the berries with 1 tbsp butter. Cover with lattice top. Bake at 450 degrees for 10 minutes, then at 350 degrees for 35-40 minutes.
Let pie cool to room temperature before cutting.
