I think I grated close to 16 cups of zucchini this weekend!
Here's the recipe (from my local paper):
Combine 2 1/2 C whole wheat flour, 1/2 C unsweetened cocoa powder, 2 1/2 t baking powder , 1 1/2 t baking soda, 1 t salt, 1 t cinnamon. Stir, set aside and preheat oven to 350.
In large mixing bowl, beat 3/4 C softened butter with 1 C sugar, then add 1/2 C maple syrup, 1/4 C honey. Add 3 eggs, 1/2 C milk, 2 t vanilla and continue mixing. Set beater aside and mix in 2 C shredded zucchini. Stir in flour mixture and pour into muffin tins or 10 inch tube pan (I used 2 med and 1 small loaf pan). Don't over-bake; should be slightly gooey in the center.
The columnist didn't give baking times and I didn't keep close track since I had pans that were different sizes. I will try to pay more attention to cooking times the next time I bake this recipe.
