Parmesan Pasta Recipe:

Ingredients:
-salt
-tomatoes (thinly sliced)
-parmesan cheese)
-olives
-capers
-courgettes/zucchinis(thinly sliced)
-cooked pasta

Directions:
Place tomato slices and zucchini slices on a greased pan, ensuring none touch each other. Sprinkle some salt over the zucchinis and drizzle olive oil over everything. On a separate pan/ same pan if you have space, spread out the pasta and cover it in the parmesan cheese, more olive oil, olives, and capers. Place the pans into a convection/toaster oven at 400 degrees F for about 15 mins. Mix in the tomato slices into the pasta (they should feel limp and slightly mushy at this point) and add the zucchinis on the side as a garnish.

The zucchinis are very tasty on their own for a late night snack-- the olive oil makes them taste as if they have butter all over them :)
