A great dish using Aussie Lamb - it's Australia Day, you just have to have lamb.
4 small Lamb Cutlets per person
Rub in some good chilli rub, I used Rudy's Rub from San Antonio - it's good!
Throw them in a plastic bag or in a dish, throw in a little olive oil and some crushed garlic.
Mix it all about and let it marinade for a while, a day or so in the fridge.
Then BBQ it on a hot hot plate, not too long, you want the lamb still pink.
Only turn the cutlets once (thats important).
Cook for 4 mins per side - depending on heat
Serve with coleslaw and a side dip dish of mint jelly.
Delicious!

Aussie lamb can be bought sometimes at Costco, Whole Foods and other places - or come to Australia and get some :)
