"Swedoodles"

This recipe is based on one by Nigella Lawson, with something that I like to pretend is a Swedish twist. They are really rather wonderful; light sweet and buttery. I assure you the picture doesn't nearly do them justice.

250g plain flour
3/4 teaspoon baking powder
100g sugar + 2 tablespoons extra for coating
1/2 teaspoon salt
1/2 vanilla pod
3 cardamon pods
135g butter, soft
1 egg
1 tablespoon cinnamon

1. Sift the flour into a bowl. Add the baking powder and the salt.

2. In a different bowl cream together the butter and the sugar until pale

3. Scrape the seeds from the vanilla pod and add to the butter and sugar.

4. Remove the seeds from the cardamon pods and crush to a fine powder in a pestle and mortar. Add these too to the butter and sugar.

5. Add the egg to the butter and sugar and whisk until combined.

6. Add the flour a little at a time, whisking as you go so that everything is incorporated. Continue whisking until the mixture comes together as a dough.

7. In a bowl or plate mix together the remaining 2 tablespoons of caster sugar with the cinnamon.

8. Break off small-ish pieces of the dough — a little smaller than a ping-pong ball — and roll in the cinnamon / sugar mixture until coated. Place on a baking sheet lined with greaseproof paper.

9. Bake for about 20 minutes at 180°C until the biscuits are just starting to brown.
