Tagliatelle nests in a muffin form

(Sorry for me posting food pictures exclusively in the last time. I have shot two rolls of b/w film that I want to process myself, but I need some time to get all the chemicals and other stuff from ebay. Plus, I do have some free time currently, so why not cook?)
Roast about 3 shallots and some garlic in a pan with olive oil. Add one tablespoon tomato puree, one can of tomatoes (about 400g) and one tablespoon of oregano. If you like, you can further add some red wine, balsamico vinegar and chili (I did!). Cook for about 15 minutes on a low flame. Cook the tagliatelle as usual. Then, roll them up with a fork and put them into the muffin form. Preheat the oven to 180°C. Mix 4 eggs, one big spoon of crème fraîche and the tomato sauce (after it has cooled down a little) together in a bowl and portion it on the tagliatelle nests. Finally, add a slice of mozzarella on each nest, before it goes into the oven for about 20-30 minutes. Enjoy!
