"Rösti", originally from Switzerland, is a kind of pancake or patty made of grated potato and usually also chopped onion and pan-fried or baked in the oven. Rösti can also contain for example small pieces of bacon or grated cheese.

This is a variation of a pizza where instead of wheat dough the bottom is made of grated potato.

Roughly grate about half a kilogram of potatoes, press the excess liquid out of them in a sieve and mix them with an egg and some oil and salt. Spread the mix on an oven tray and bake for 10–15 minutes at 225°C. Then add toppings and bake again, just like you would a pizza. I used what little toppings I happened to have, in this case tomato sauce, chopped tomato, olives and squash.
