roasted red potatoes
Cooking time: 45 minutes
INGREDIENTS
* 1 lb baby red potatoes, quartered
* 2 T butter
* 1 clove of minced garlic
* 2 sprigs of rosemary + misc herbs
* 1 t salt
* 1 lemon, juiced
* 1 T grated Parmesan cheese
DIRECTIONS
1. Preheat oven to 350°.
2. Bring a pot of water to boil with a dash of salt. Par-boil the quartered potatoes for 10 minutes.
3. Put the butter into a medium bowl and set it in the pre-heating oven until soft and mostly melted.
4. Chop up herbs. By now, the butter should be perfect, so pull the bowl from the oven & combine melted butter, garlic, whatever other herbs you've chosen, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
5. Place potatoes on parchment lined baking sheet.
6. Bake for 15 minutes, pull pan from the oven and turn potatoes over. (If this is for breakfast potatoes, now is the time to start making the bacon!) Turn oven up to 400° & bake for an additional 15 minutes, or until golden brown.
