Peach pie

Crust:
2.5 cups white flour
2.5 tablespoons sugar
1/2 teaspoon salt
2 sticks butter cut into very small pieces
blended until the whole mix looks granular, then mix in 6 tablespoons very cold water. Dust with whole wheat flour and roll flat.
Pie filling:
Six cups late season New Hampshire peaches
1/4 cup flour
1/2 cup sugar
pinch of salt
dust the whole mix with nutmeg
3 tablespoons diced butter
Bake at 425 for 30 minutes. Place a rim of foil around pie to protect outer crust, and continue to bake about 20 minutes more at 325 or until bubbly.
