Mock Ham Wrapped Veggie Crab with Pepino Melon Salsa

Half the Pepino melon, puree 1/2 with a little agave and salt - refrigerate.
Dice the other half, add chopped scallions and a drizzle of agave. Set aside.
Slice the veggie ham paper thin- I used an old meat slicer.
Chop the veggie crab in bite sizes- marinaded with some Bragg's and chopped chives.
Clean some basil leaves- roll each peice of veggie crab in a basil leaf then in the "ham" - place in a skillet. Cook 4-5 minutes to get warm and then plate with the salsa and drizzle with the puree.
