Potatoes & Herb

16 new red potatoes, quartered (I used 8 bigger red potatoes)
3 tablespoons unsalted butter
1/4 cup chopped fresh herbs (I used 2tsp dried chives and 1 tsp dried parsley and 1 tsp dried rosemary)
1 tsp salt
1/2 tsp pepper (or to taste)
Place the potatoes in a pot and cover with water. Bring to a boil on high heat.
Reduce heat to medium. Simmer until potates are tender (10 - 15 minutes). Drain
Melt butter in a large pan. Add potatoes. Cook stirring gently until potatoes are browned.
Sprinkle potatoes with herbs, salt and pepper. Serve hot.
